Veal Meatloaf Cupcakes with Mashed Potato Topping

1 lb. ground veal
3/4 cup instant Oatmeal
1/4 cup Tomato Juice
2 ea. Eggs
1 tsp. Garlic, minced
3 Tbsp. Onion, minced
1 tsp. Salt
1 tsp. Black Pepper
3 Tbsp. Parsley
1-1/2 cup Instant Mashed Potatoes, prepared
2 Tbsp. Ketchup
Pre-heat an oven to 350 °F.
In a medium sized bowl, mix the veal, oats, tomato juice, eggs, garlic, onion, salt, black pepper and chopped parsley.
Divide the meat mixture into 6 muffin cups.
Place the muffin pan in the oven for 15-20 minutes or until they have browned and reached an internal temperature of 160 °F.
Garnish with Mashed Potatoes and ketchup.
